Veteran luxury hotel chef brings more than 20 years of international experience to the Phnom Penh landmark

Raffles Hotel Le Royal, the iconic luxury hotel in Cambodia’s capital, has appointed David Eldridge as its new Executive Chef, as the historic property continues to elevate its fine-dining programme.

Chef David brings more than two decades of international luxury hospitality experience across eight countries, including the Maldives, Thailand, Vietnam, Tanzania, the UAE, Qatar, Seychelles, and his native South Africa. He joins Raffles Hotel Le Royal from Anantara Chiang Mai Resort, where he most recently served as Director of Food, Beverage & Culinary.

His career also includes senior culinary leadership roles with several leading luxury hotel brands, including Four Seasons Hotels and Resorts, Kempinski Hotels, and The Luxury Collection under Marriott International.

Celebrated dining venues at Raffles Hotel Le Royal

Raffles Hotel Le Royal is home to some of Phnom Penh’s most established dining venues, including Restaurant Le Royal, an acclaimed Khmer fine-dining restaurant, and Le Phnom 1929, a classic French-style brasserie inspired by the hotel’s colonial-era heritage.

The appointment underscores the hotel’s continued focus on refining its culinary identity while appealing to both international travelers and the local dining community.

Originally opened in 1929, the Raffles hotel today features 175 rooms and suites, all revitalised through a comprehensive restoration completed in 2019. The transformation blends modern comfort with timeless elegance, reflecting the hotel’s French colonial heritage, enriched by Khmer artistry and Art Deco design.
