
Michelin-starred Chef Takagi Kazuo joins Chef Charles Degrendele at Sofitel Legend Metropole Hanoi for an exquisite two-night ‘Rendez-vous’ experience blending Kyo-ryori and modern French haute cuisine
Sofitel Legend Metropole Hanoi’s acclaimed Rendez-vous dining series at Le Beaulieu returns this month with a gastronomic highlight: an exclusive four-hands dinner on October 31 and November 1, 2025, featuring Chef Takagi Kazuo of the two-Michelin-star Kyoto Cuisine TAKAGI in Japan and Chef Charles Degrendele, Le Beaulieu’s Chef de Cuisine.

Together, the two chefs will present a multi-course menu that fuses the refinement of Kyo-ryori (Kyoto cuisine) with the elegance of contemporary French haute cuisine—elevated further with Sturia caviar and fine wine pairings. Expect a delicate balance of precision, artistry, and bold flavor expression.
Highlights include Sushi bonbon (tuna, salmon, dill), Crabe (Vietnamese crab, Hokkaido scallop, dashi jelly, kikuna), Poulet Jaune (French yellow chicken “Albufeira,” smoked potatoes, quenelles, roasted jus), Boeuf (Wagyu beef tenderloin, bamboo shoot, dashi, Japanese pepper sauce), and Îles flottante (vanilla custard, baked egg whites, salted caramel) for dessert.
The dinner is priced at VND 4,500,000++ per person, or VND 7,000,000++ with wine pairing. Accor+ Explorer members enjoy 10% off the dinner menu and 15% off wine pairings. Service runs from 6:00 pm to 10:30 pm each evening, with limited seating—advance reservations are highly recommended.
Le Beaulieu: A Modern Classic
Le Beaulieu, the signature restaurant at Sofitel Legend Metropole Hanoi, blends 124 years of French culinary tradition with modern sophistication. Its Rendez-vous series, launched in 2024, invites Michelin-starred guest chefs to collaborate with Chef Degrendele in creating one-of-a-kind dining experiences that celebrate craftsmanship and creativity.
Earlier this month, the MICHELIN Guide awarded Sofitel Legend Metropole Hanoi the prestigious MICHELIN Key distinction, naming it among only 13 hotels in Vietnam recognized for exceptional hospitality and timeless heritage. The Guide praised the Metropole as “a place that truly feels like traveling through time,” with Le Beaulieu as its culinary flagship.
