International Hospitality Career

Born in Mexico City to French parents, Pollak grew up in a bicultural environment that shaped his global outlook on hospitality. He later returned to France to study hotel management at Institut Paul Bocuse in Lyon, a formative experience that set the foundation for his long career with Four Seasons.

He joined the company in 1996 as Bar Manager at Four Seasons Hotel Mexico City.

With a strong passion for gastronomy and service, Pollak built much of his career in the food and beverage sector. Over the years he progressed through increasingly senior operational roles, including Head of Food & Beverage, Hotel Manager and Resort Manager at several prominent destinations.

These included properties in Punta Mita, Mexico; Dallas, Texas; and Hualālai, Hawaii.

Leadership Roles Across the Global Portfolio

In 2017, Pollak was appointed General Manager of Four Seasons Hotel Guangzhou before later assuming leadership of the brand’s flagship property, Four Seasons Hotel Toronto.

His appointment to Madrid marks a return to Europe for the seasoned hotelier.

Strengthening Madrid’s Position in Urban Luxury

At Four Seasons Hotel Madrid, Pollak will focus on strengthening the hotel’s positioning as one of Europe’s leading urban luxury destinations.

“Every Four Seasons hotel is unique,” says Pollak. “But what they all have in common is a deep sense of belonging and pride. My goal is to strengthen that connection with the team, with our guests and with the city.”

With fluency in English, French and Spanish, Pollak brings a multicultural leadership approach suited to Madrid’s international clientele.

Continuing the Hotel’s Next Chapter

Pollak says his priority is to build on the foundations established since the hotel’s opening while continuing to evolve its guest experience.

“I am enormously proud to form part of the team at Four Seasons Madrid,” he says. “I accept the responsibility to continue positioning and building on everything the team has already done over the last five years.”

With the new leadership appointment, Four Seasons Hotel Madrid enters its next phase focused on maintaining high standards of service, innovation and deeper engagement with the city’s hospitality and cultural landscape.
