BANGKOK, Thailand – Two-Michelin-starred restaurant Gaa has launched a new tasting menu that reimagines Indian culinary traditions through a contemporary lens, reinforcing its position as one of Asia’s leading fine dining destinations.

Created by Chef Garima Arora, the new 16-course experience reflects years of research into India’s diverse regional cuisines while embracing seasonal Thai ingredients. Located in Bangkok’s vibrant Thong Lo district, Gaa continues its philosophy of presenting authentic Indian cuisine through innovative techniques and storytelling.

A New Chapter for Modern Indian Fine Dining

Since opening in 2017, Gaa has earned international recognition for redefining Indian fine dining. The restaurant received its first Michelin star in 2018 and a second in 2024, making Chef Garima Arora the first and only Indian female chef to hold two Michelin stars.

Rather than pursuing fusion cuisine, Gaa focuses on interpreting India’s culinary heritage in a modern context. Every course is designed to showcase the country’s rich gastronomic traditions while highlighting premium seasonal produce sourced across Thailand.

The latest menu was inspired by Chef Garima’s research journey through Bihar, where she explored regional recipes, cooking techniques and food culture. The experience unfolds across eight themed chapters covering chaat, breads, curries, kebabs, masala and desserts, with each dish accompanied by stories that explain its cultural significance.

Signature Dishes Inspired by Indian Heritage

Among the menu’s highlights is Atte Ki Khichdi, Chef Garima’s contemporary interpretation of a traditional Bihari comfort dish. Inspired by the ingenuity of communities that transformed whole wheat flour into rice-shaped dumplings during seasons when rice was scarce, the dish is served as a savoury porridge alongside nine house-made chutneys, pickles and condiments that celebrate Bihar’s rich culinary traditions.

Another standout is Morel, Malai, Total Masala, which pays tribute to the iconic spice blends found throughout northern India’s bustling street food culture. Earthy Kashmiri morel mushrooms are paired with rich malai, grilled and seasoned with Gaa’s proprietary 16-spice Total Masala blend before being finished with buffalo-milk brown cheese sourced from an artisan producer in Mumbai.

For dessert, the Tadka Ice Cream offers a playful finale inspired by Kerala’s traditional Sadhya feast. A hot, aromatic spice tempering is poured over chilled daal payasam ice cream wrapped in a crisp banana papadum, creating a contrast of temperatures, textures and flavours that evokes familiar Indian home cooking while delivering a contemporary fine dining experience.

Each course has been carefully developed to connect diners with India’s diverse culinary landscape through flavour, memory and culture. Rather than focusing solely on technique, the menu encourages guests to discover the history and traditions behind every ingredient and preparation.

Chef Garima’s approach continues Gaa’s mission of demonstrating that Indian cuisine is not a single culinary category but a complex civilisation shaped by centuries of regional diversity, craftsmanship and innovation.

Dining in a Restored Thai Heritage Home

The dining experience is complemented by Gaa’s unique setting inside a restored 1960s Thai wooden house in Bangkok.

Guests can dine in the elegant Baan Ruen Thai Dining Room, featuring curved ceilings and an artistic string installation symbolising human connection, or enjoy a more intimate atmosphere in the Garden Room, where warm golden tones create a secluded private dining experience.
